The Magañas family’s anaerobic Pacamara is a total hit! The anaerobic fermentation allows the fruit sugars in the cherries to interact with the bean, enhancing the sweetness and deepening the fruity character.
By picking the cherries when they are on the verge of overripening and then fermenting them anaerobically—under pressure and without oxygen in sealed fermentation tanks—the family creates a full-bodied coffee with rich notes of fruit, raisins, and dark berries. The anaerobic fermentation method presses fruit juices from the cherries into the coffee beans, resulting in a truly flavorful coffee that also features notes of plum, peach, and tropical fruit.
The Magaña family owns farms in the Apaneca region and tends to them with great care and passion; their commitment to quality at every stage is unmatched. We have known Angel and his family for 20 years and purchase their entire harvest. The family is deeply committed to both the environment and quality, and they always strive to improve a little more each year. Their philosophy centers on growing and producing coffee in harmony with nature, with a deep concern for the balance of the soil and the ecosystem.
