Sítio Balaio is part of the larger Fernandez farm, which today is run by the children of founder Mario Fernandes (the farm was divided among the brothers after the death of father Mario in 2010). This particular plot is owned and run by Paulo Alexandre Fernandes. His farm Balaio consists of a total of 10 hectares - 4 hectares of which have coffee trees - at an altitude of 1300 meters in Pedralva, located in the region of Minas Gerais.

The family grows different varieties, this lot being a yellow Catuai that has been dried in its own fruit on the farm. Paulo's wife, Débora Fernandes, keeps a close eye on all the drying; while he is responsible for the harvest, she takes care of the drying processes for the coffee dried here. In the coffee we find a classic chocolate character with a distinct fullness in the aftertaste.
