This coffee has been cultivated by Sebastian Gomez on the La Divisa farm, located in Quindío, Colombia. Sebastian is a progressive coffee grower who has made a name for himself in the specialty coffee world thanks to his gently slow drying methods. These give rise to smooth, fruity coffees with fine balance & sweetness.
This naturally dried The microlot comes from Chiroso, a variety originating in Ethiopia, and is an excellent example of Sebastian's craft. The coffee cherries first undergo 56 hours of aerobic fermentation and are then dried on raised beds for two weeks. This is followed by at least 14 more days of drying, during which the flavors of the coffee berries slowly penetrate the beans and deepen the coffee's fruit-driven character.
