A few years ago, the owner of La Secreta initiated a project to carry out carbonic maceration of coffee, using stainless steel tanks with CO2 injection. Based on this experience, they developed a method for fermenting coffee with fruit juice, in this case strawberry juice.

The method involves placing coffee berries in a closed fermentation tank filled with carbon dioxide, where they ferment under anaerobic conditions for up to 120 hours. When the process is complete, the berries are removed, the pulp is peeled off, and the beans, with their sugar layer intact, are returned to the tank. Here, the fruit juice from the coffee berries and strawberry juice are added, and a second fermentation takes place over three days before the coffee is rinsed and dried.

The result is a smooth and mellow coffee with a delicate sweetness and a distinct strawberry flavor.

Finca La Secreta is more than just a coffee farm—it’s a place of natural wonder, rich biodiversity, and environmental commitment. Acquired by the exporter Cumbres in 2019, this 34-hectare estate was carefully selected for its unique ecosystem and outstanding coffee-growing potential. Today, the dedicated Cumbres team manages over 130,000 coffee trees across 25 hectares, ensuring both quality production and sustainable farming practices.

Beyond its coffee fields, La Secreta holds a true hidden gem: a 5-hectare natural reserve. This untouched sanctuary is home to diverse plant and animal species, playing a crucial role in conserving local biodiversity. The forest not only enhances the farm’s beauty but also protects vital water sources, supplying fresh water to the Vereda Ventorrillo community.
