And we're not starting with just any coffee, but an exceptional nano-lot from our favourite country, Colombia.

Finca Monarca is a speciality coffee farm located at an altitude of approximately 2,000 metres above sea level. The farm is named after the monarch butterfly, which is commonly found on the farm. Monarca is surrounded by forest and natural water sources and can be reached via a 60-minute hike through coffee plantations and woodland.

The farm grows coffee under conditions that promote quality and slow ripening. Cultivation takes place in nutrient-rich soil, and the focus is on developing the coffee's potential from seedling to finished raw material.

Sustainability is a central part of the business and includes sustainable farming methods, preservation of the surrounding nature reserve, work for biodiversity and involvement in the local community. The farm also works with responsible resource management, use of renewable energy, environmental education and continuous monitoring of its cultivation and environmental efforts.

BACKGROUND TO THIS MICRO-LOT

The process begins with harvesting, followed by manual sorting and water separation. The coffee then undergoes anaerobic fermentation in tanks for 72 hours before being moved to the drying station, where it is dried for approximately 15–18 days.
