A few years ago, the owner of La Secreta – our exporter Cumbres – initiated a project to carry out anaerobic fermentation of coffee using stainless steel tanks. These have been used in this micro lot!

The team behind Cumbres is fantastic at constantly developing their innovative fermentation and drying techniques, and they are at the forefront of the specialty coffee industry.

This anaerobically wet-processed Bourbon Sidra undergoes a carefully designed two-stage fermentation process. First, the coffee cherries undergo 24 hours of dry fermentation to stimulate metabolic activity from yeast and bacteria. The cherries are then peeled and the sugar is removed. After rinsing, they are transferred to steel tanks where they ferment at a low temperature, allowing lactic acid bacteria to slowly break down the remaining sugars and continue the fermentation process, which increases the lactic acid concentration.

After hulling and thorough washing, the beans were dried on African beds, resulting in a clean and lively flavor profile. Here we find the characteristic creamy texture typical of Bourbon Sidra, combined with a brilliant aroma reminiscent of lemon blossom and lemongrass. The taste harmonizes beautifully with juicy peach, sweet-sour pomegranate, and light fruitiness.

Acquired by the exporter Cumbres in 2019, this 34-hectare estate was carefully selected for its unique ecosystem and outstanding coffee-growing potential. Today, the dedicated Cumbres team manages over 130,000 coffee trees across 25 hectares, ensuring both quality production and sustainable farming practices.

Beyond its coffee fields, La Secreta holds a true hidden gem: a 5-hectare natural reserve. This untouched sanctuary is home to diverse plant and animal species, playing a crucial role in conserving local biodiversity. The forest not only enhances the farm’s beauty but also protects vital water sources, supplying fresh water to the Vereda Ventorrillo community.
