This nanolot of only 24 kilos (we roast it once) is a anaerobic Geisha from producer Monica Reyes. Her farm, Ojo de Agua, is located in Colombia's most southern region, Nariño. Together with her 95-year-old father, she has developed a process to give her Geisha coffee a uniquely exotic profile.

After water sorting the coffee cherries, Monica lets them dry on raised tables for two days, before transferring them to yeast tanks for a 120-hour anaerobic fermentation. Finally, the cherries are moved to the drying station, where they are left to dry for at least 15 days. The result is an amazingly elegant, tropical fruity, floral & smooth herbal coffee.
