Finca La Secreta is run by Juan Carlos Mejias who, together with the rest of the family, works to nurture over 130,000 coffee trees on their 30-hectare farm. Ten of these hectares are a nature reserve, home to various animals and plants and protection for tree and water resources.
The Chiroso variety is a relatively new variety that originated in the Urrao region of Antioquia, Colombia. Originally cultivated for its resilience and high productivity in the cool climate and high altitude of the area, it is now celebrated for its complex and floral profile.
This mikroIott is an anaerobic Honey, where the coffee has been allowed to dry in its own sugar in an oxygen-free environment. In the cup we find a smooth & complex – slightly spicy – fruity sweetness leading to a long elegant finish. A truly complex coffee, with a flavor profile that is completely new to us; it is hard to define but all the easier to like.
