Det här är ett regionalt våtförädlat kaffe från familjeägda gårdar i Huila, Colombia. Fermenteringsmetoden har utvecklats och övervakas av två av kaffeproducentvärldens främsta profiler: Jhoan Vergara från Finca Las Flores och Néstor Lasso från Finca El Diviso.
Kaffet genomgår en tvåstegsfermentering där en aerob fermentation is followed by an anerob. They are then using a method called Thermal Shock, in which the coffee is rapidly cooled and heated using cold and hot water, respectively, to stabilize the fermentation and preserve the aromas and flavor nuances developed during the process.
The coffee is named Las Moras, meaning “blackberries” in Spanish—a clear hint of what awaits in the cup. Ripe fruit takes center stage, with juicy notes of blackberry, soft lactic nuances, and a clean, lively citrus acidity. The result is an expressive coffee with a creamy mouthfeel and a long, fruity finish.
