An anaerobic coffee from the Pacamara variety - amazingly delicious as espresso.

The coffee is grown by the Magaña family in the Apaneca region - who also run the farms San José and El Limar. This is their newest farm and the trees were planted in 2021 and this is the first harvest from the newly planted Pacamara trees.

Each cherry have been hand-picked when they are purple, just on the verge of being overripe, and then fermented in pressurized carbon dioxide containers for four days, before the cherries have been washed in cold water and  slowly dried in its own pulp for over a month. It produces a creamy coffee, with notes of sweet grape, orange peel and caramel.

We have known Angel and his family for more than 15 years and are grateful to work with them, we buy their entire crop. Their coffee gets better every year, and has never been as good as in the last harvest.

Brewing Facts

This is a coffee that has an extreme amount of character in it. It has got a lovely fruity acidity, which can - if you brew the coffee when it is too fresh or simply use the wrong ratio and extract too quickly - turn into quite a sharp one. But with the right extraction, and when you let the coffee rest for a couple of weeks after roasting, it richly rewards the barista with a fine complexity and balance.
