The leaves are shaded before harvest and then slowly stone-ground between granite millstones into a fine, vivid green powder. The result is a matcha with smooth umami, natural sweetness and a clean, balanced finish with minimal bitterness.

First Harvest Premium is a stone-ground, premium-grade matcha developed especially for lattes and other matcha drinks. Its full-bodied flavour holds up well against milk, while still being smooth enough to whisk and enjoy on its own. The balanced taste and beautiful green colour make it the natural choice for everyday matcha, whether you are a curious beginner or an experienced matcha drinker.

AICHI—ONE OF JAPAN’S PREMIER MATCHA-PRODUCING REGIONS

Aichi Prefecture is located in central Japan, between Tokyo and Kyoto, and is one of the country's most renowned regions for matcha. Tea has been grown here since the Kamakura period in the 13th century, and the region is especially prized for its smooth, umami-rich matcha with a vivid green colour and very low bitterness.

Unlike many other tea districts, where several different types of green tea are produced, Aichi has largely specialised in tencha, the shade-grown tea leaves that are ground into matcha. More than three quarters of all tea grown in Aichi is destined for matcha, making the area one of Japan's most important centres for high-grade matcha. Over the centuries, producers have refined their methods of shade growing, steaming, drying and stone grinding, techniques that are still used today.

HOW IS OUR MATCHA PRODUCED IN AICHI?

SHADE GROWN

A few weeks before harvest, the tea bushes are covered to protect them from direct sunlight. The reduced light exposure causes the leaves to produce more chlorophyll and retain higher levels of amino acids, above all L-theanine. This is what gives the matcha its vivid green colour, rich umami and natural sweetness.

HARVEST

Our matcha comes from the first spring harvest, when the leaves are young and at their most aromatic. This is the harvest that produces the smoothest and most balanced matcha.

STEAMING & DRYING

Immediately after harvest, the leaves are steamed to stop oxidation and preserve their fresh green colour. Unlike sencha, the leaves are not rolled but dried flat. The stems and veins are then removed, leaving only the finest leaf material, tencha.

STONE-GRINDING

Finally, the tencha is slowly ground between granite millstones into an extremely fine powder. The slow grinding generates very little heat, which helps preserve the colour, aroma and flavour.

OTHER

Origin: Aichi, Japan
Cultivars: Yabukita, Samidori and Okumidori
Harvest: First spring harvest
Grinding: Stone-ground in a granite mill
Ingredients: Organic green tea (matcha)
Contents: 50 g or 200 g
Perfect for: Matcha lattes and straight matcha
Best before: See packaging
Storage: Keep in a cool, dry and dark place. First, whisk with a splash of cold water into a smooth paste. Then pour in about 100 ml of water at around 80°C and whisk briskly in an M or W motion until the surface is covered with an even, fine foam.

Koicha: Sift about 3-4 g of matcha into a bowl and add about 30-40 ml of water at around 80°C. Knead slowly with the whisk in circular motions until the tea is thick, glossy and completely free of lumps.

Latte: Sift about 3-4 g of matcha into a cup or bowl. Add a small splash of water, about 10 ml at around 80°C, and stir or whisk into a thick, smooth paste with no lumps. Then add another 20-30 ml of water and whisk briskly back and forth into an even matcha base. For a hot latte, top the base with about 150-200 ml of hot, frothy milk. For an iced latte, fill a glass with ice and about 150-200 ml of cold milk, then pour the base over. We think oat milk works best, but feel free to adjust the amount of matcha and milk to your taste and experiment until you find your favourite.

[37,655
[144
2278
post-68290","product","type-product","status-publish","has-post-thumbnail","product_cat-te","product_cat-matcha","produkttyp-te-losvikt","smaker-50-200-gram","first","instock","taxable","shipping-taxable","purchasable","product-type-variable","has-default-attributes
["GET
