It is a wonderfully balanced, perfectly rounded, full-bodied coffee with a mellow sweetness.<\/p>\n<p>Each coffee cherry is hand-picked when purple, just on the verge of being over-ripe, and then slowly dried in its own pulp for over a month. The result is a rich coffee, with notes of plum, milk chocolate, nectarine and orange peel.<\/p>\n<p>We have known Angel and his family for 20 years, we buy their entire harvest and have visited them many times, most recently in January this year. It is a collaboration we value highly. The family is deeply committed to both the environment and quality, always striving to improve a little every year. Their philosophy is to grow and produce coffee in harmony with nature, with a deep concern for the balance of the soil and the ecosystem.
