The Indonesian island of Flores is unknown in the coffee world, but alongside its more famous siblings Sumatra och Sulawesi, a lot of coffee is produced here, usually fully organic.

Our first coffee from Flores has a taste profile with a tea-like elegance, with a little more hesitant fruit tones. The producer achieves this through the combination of yeast, bacteria and fungal-based components, as well as by drying the beans in their own sugar, a so-called Honey method.

The coffee cherries are picked on small family farms in the Manggarai region. Traditionally, farmers here grow coffee as a complementary source of income in addition to other cash crops. This particular coffee is the island's pride and has participated in - and won - many barista competitions around the world.

The cherries are collected from surrounding mountains and villages about 2 - 4 hours away and then processed in the town of Ruteng. They are processed and fermented in massive 1000-liter water tanks because they come in large batches from the villages.
