This is a delicious example of a naturally fermented coffee, where the coffee beans have dried inside its own fruit. The producer Alberto Guardia, who has more than 20 varieties on his farm, produces extremely high quality micro-lots and we buy his coffee every year.

This microlot is made from the Obata cultivar and has everything you could want from a cherry-dried coffee; high sweetness, great fullness and a fantastic fruitiness. Perfect for Espresso!

Compared to how we roast for filter coffee, we here increase the total time and final temperature. This rounds off the acidity in the coffee and gives a more balanced espresso. It also increases the fullness and creates a pleasant bitterness in the finish, which goes well with the coffee's naturally high acidity.
