We have known the Magaña family for over 10 years and have visited their farm San José - which has been owned by the women of the family for four generations - several times. The ecological awareness is high and the farm has a variety of animals and plants. Here they grow the variety of bourbon and really do everything to optimize its delicate character; the coffee trees grow under shade and all coffee is picked by hand when fully ripe. A full-bodied coffee with peach sweetness and soft chocolate in character. Good as a brew & espresso.

Detta är den första i en serie där vi väljer ut ursprungskaffen från sortiment och rostar dem lite längre och mörkare, för att de på så sätt skall passa bättre som Espresso. Den lite längre rostprofilen gör syran i kaffet mjukare och ökar fylligheten.
 
El Salvador San José har en mjuk syrlighet som vi tycker passar så bra som en modern espresso. Här finns visst lite syra, men den balanseras så fint av kaffets mjölkchokladsötma.
